On completion of the module, learners will have a clear understanding of the Front Office operations. Topics cover include Organization of a Hotel and the Rooms Division, Front office systems, accounting cycle & communications, Role of housekeeping, the structure & importance of hygiene standard and Safety & Security standards.

Food & Beverage Operations Management

The aim is to equip learners with the knowledge of the Food and Beverage Operational Systems aligning to customers' needs. Topics cover include The Food and Beverage Industry, Production and Sale of Food and Beverages, Functions of Food and Beverage Services and In-house services, technology of service and payment methods.

Food Safety Management

The aim is to equip learners with the knowledge of Food Safety Management. On completion of the module, learners will be able to a understand of Food Hygiene and Safety issues. Topics cover include Food & Beverage Operations, Expectations and Challenges, Nature of Food Poisoning Sources, Food Contamination – Physical, Biological and others and Food Contamination Prevention and Control.

Menu Planning & Product Development

The aim is to equip learners with the knowledge of all phases of menu preparation. On completion of the module, learners will be able to break the menu down the different components and analyses each one as it applies to different types and size of operations. Topics cover include Menu Planning in Food Service Operation, Standardized recipes and Recipe costing, Importance of Menu Planning and Importance of Menu Engineering & How a menu directs the Business.

Language Skills for Restaurant Personnel

The aim is to equip learners with the knowledge of job-related vocabulary and language skills needed to perform the various tasks in restaurant works. On completion of the module, learners will be able to know the easy-to-follow guide to the various tasks in restaurant work. Topics cover include Structure of the restaurant, different cooking methods and types of food, Restaurant Table reservations, receiving / seating of guests, taking Beverage orders and clearing Place settings, Process of taking restaurant food and beverage orders and Complaint Management, Dessert and coffee service, restaurant bills, and restaurant mis en place.
